My experimentation worked! Tonight I made a delicious batch of creamy Chocolate Peppermint ice cream... When there was no cream in the house! Basically I created my own "cream" for it that i think worked quite well... I didn't really use measurements, but here's the combo...
-Milk -Butter (I used Unsalted Sweet Cream butter 'cause that's what was in the house, but I think other kinds would work too... Need more experimentation!) -Vanilla pudding mix -Powdered sugar
I cooked that together till I got a nice, creamy mix, then used that in essentially this recipe... Though I ended up throwing a lot of other crap in instead of the vanilla bean/vanilla extract to flavor it, because A) There's no vanilla beans in the house, and B) I felt like making chocolate at that point. Just for kicks, here's all the flavoring stuff I put in...
-Vanilla extract -Ghirardelli peppermint hot chocolate mix -Peppermint dust (we had some left over from making Christmas cookies... It's basically any old peppermint candy chopped up until it's pretty much a dust -Unsweetened coco 9'cause my dad said it was too sweet... and he was right).
I don't believe I put anything else in there until the end... Then, when it was mostly frozen, I added a bunch more of the peppermint dust and some melted dark chocolate (some of those Bliss squares). I was trying to make those little flecks of chocolate 'cause the website that I was using to make it said that if you drizzled melted chocolate on nearly frozen ice cream then mixed it, breaking the chocolate as it froze, you'd get those. Not sure how well that part worked, but the ice cream tastes great!
